OBSERVED THE FOLLOWING CONTAINERS STORING FOOD TO HAVE NO LABELS: (1) TWO CONTAINERS WITH GREENS LIDS STORED ON THE SPICE RACK NEAR THE HAND SINK, (2) TWO LARGE ROLLING CONTAINERS STORING SUGAR AND FLOUR, (3) MULTIPLE SPICE HOLDER (@ MAIN COOKING LINE), & (4) 2 LARGER CONTAINERS IN THE DRY STORAGE ROOM. PROVIDE FOR ALL FOODS TO HAVE PROPER LABELING INFORMATION. 750.130 NEXT INSPECTION
OBSERVED THE FOLLOWING FOOD ITEMS IN STORAGE TO NOT HAVE ANY COVER OR OVERHEAD PROTECTION: (1) SEVERAL CONTAINERS OF BREADING IN WALK-IN COOLER [WIC] #5 & (2) COOKED MEAT IN WIC 4. IN ADDITION, I OBSERVED 1 BOX OF BEEF AND 1 BOX OF PORK TO BE STORED ON THE FLOOR IN WIC #4, AND SEVERAL BOXES OF FOOD ON THE FLOOR WITHIN WALK-IN FREEZER (WIF) #3. PROVIDE FOR ALL FOOD IN STORAGE TO BE PROTECTED AND KEPT SIX INCHES ABOVE THE FLOOR. 750.120/130. NEXT INSPECTION
OBSERVED A CUP BEING USED TO DISPENSE FOOD FROM CONTAINERS WITHIN THE HOSHIZAKI PREP-TABLE/COOLER--A SMALL CUP WAS USED TO DISPENSE CHEESE. USE A PROPER DISPENSING TOOL--ONE WITH A HANDLE TO PREVENT CONTACT WITH SURFACES THAT TOUCHES THE FOOD. 750.280 NEXT INSPECTION

IN ADDITION, I OBSERVED THE HANDLE OF THE TRUE COOLER (LOCATED IN FRONT OF THE HOSHIZAKI PREP TABLE/COOLER) TO BE BROKEN AND HELD TOGETHER WITH TAPE. REPAIR ALL EQUIPMENT. 750.690 NEXT INSPECTION
21  OBSERVED WIPING CLOTHS LEFT OUT ON THE FOOD PREP SURFACES--ONE WAS LEFT ON TOP OF THE HOSHIZAKI 3-DOOR PREP COOLER/TABLE AND THE OTHER WAS LEFT ON THE PREP TABLE BELOW THE SPICE RACK.
